3 scoops Vanilla Vegan Ice Cream

200ml Vegan Whipped Coconut Cream

200g Raspberries

1 Nakd Blueberry Muffin Bars

A Handful of Pistachios & Berries

Icing Sugar

For the whipped cream

Add 200ml of Vegan Cream into a mixing bowl with 1 tablespoon of icing sugar
This step is super easy when made with a mixer using the whip attachment, but you can also whip the cream by hand as well until it thickens and retains its shape.

For the raspberry coulis

Add 200g of raspberries and 1 tablespoon of icing sugar into a pan for a few minutes until the raspberries start releasing their juices.
Then blend briefly into a puree and sieve through a colander to remove the raspberry seeds.

How to assemble the knickerbokerglory

Take a tall glass or jar and place a layer of ice cream as a base, followed by ½ crushed Nakd Blueberry Muffin bar.
Then proceed to add a layer of whipped cream, followed by mixed berries, crushed pistachios and a dribble of coulis.
Repeat the layer of ice cream with 1/2 crushed Nakd Bluebrry Muffin bar.
Then top with whipped cream a sprinkle of mixed berries and crushed pistachios and a dribble of coulis to finish.
Serve and Enjoy this lovely and easy dessert!
